Cooking Suggestions:
Pre-heat the oven to 190 °C (170 °C fan) or prepare a medium-hot pan. Season the fillet with sea salt, pepper and a drizzle of olive oil. For a pan-sear: place skin-side down, cook 2–3 minutes until crisp, then flip and finish 1–2 minutes until just opaque and flaking. For oven roast: place on a bed of lemon slices and herbs, cook approx. 8–10 minutes. Serve with a squeeze of fresh lemon, steamed greens or new potatoes.

Storage & Serving:
Keep refrigerated on delivery and use on the day of purchase for optimal freshness. Rinse lightly in cold water, pat dry and allow to come to room temperature for 10 minutes before cooking. This fillet is ready-to-cook — minimal trimming required.
