Cooking Suggestions

Preheat your oven to 190 °C (170 °C fan) or heat a pan over medium-high heat. Season the halibut fillet with sea salt, pepper, and a little olive oil. For pan-searing, place the fish skin-side down and cook for 2–3 minutes until the skin is crisp, then flip and cook for a further 1–2 minutes until just opaque and flaking. For oven-roasting, place the fillet on a bed of lemon slices and fresh herbs and cook for around 8–10 minutes, depending on thickness. Finish with a squeeze of fresh lemon and serve with steamed greens or new potatoes.
