Pan-seared: Season with sea salt & cracked pepper. Heat a non-stick pan with a touch of olive oil over medium-high heat. Place skin-side down first for 2-3 mins till crisp, then flip for 1-2 mins until just cooked through.

Oven-baked: Preheat oven to 200 °C (180 °C fan). Place fillet skin-side down on a lined tray, drizzle with olive oil, add lemon slices and fresh dill or parsley. Bake for approx. 8-10 minutes depending on thickness.
