Cooking Suggestions:
Pre-heat your oven to 200 °C (180 °C fan). Lightly score the skin, rub with sea salt, pepper and a little oil. Place the whole fish on a bed of lemon slices and fresh herbs. Roast for approx. 20-25 mins per kg (adjust for weight). Finish with a knob of butter and squeeze of fresh lemon. Serve with seasonal vegetables or new potatoes for a refined yet simple dish.

Keep chilled on receipt. Use on the day of delivery for optimal freshness. Rinse under cold water, pat dry. The fish is ready-to-cook whole. If you prefer, ask your fishmonger to portion it into steaks or fillets.
