Cooking Suggestions:
Pre-heat your oven to 200 °C (180 °C fan). Lightly score the skin and rub the fish with sea salt, pepper and a little olive oil. Stuff the cavity with lemon slices, fresh thyme and garlic. Place the fish on a roasting tray and cook for approx 20-25 minutes (adjust for size) until the skin is crisp and the flesh flakes easily. Finish with a squeeze of fresh lemon and serve with seasonal vegetables or new potatoes.
Storage & Serving:
Keep chilled on delivery and consume on the day for optimal freshness. Rinse under cold water, pat dry and score the skin just before seasoning. Serve whole for visual impact or ask your fishmonger to butterfly it for the grill.
