Characteristics
- Appearance: Madagascan tiger prawns have an orange‑brown or greyish shell with bold vertical stripes, similar to a tiger’s markings, and the meat turns firm and opaque once cooked.
- Flavour: These tiger prawns are known for their sweet, delicate flavour and meaty bite, making them an excellent choice for everything from barbecues to refined seafood plates.
How to Cook Tiger Prawns
- Grilling: Preheat the grill to medium‑high. Marinate tiger prawns with olive oil, garlic, lemon juice, and herbs, then grill for 2–3 minutes per side until opaque with a light char.
- Sautéing: Heat a little olive oil or butter in a pan over medium‑high heat. Cook the prawns for 2–3 minutes per side until they turn pink and opaque, adding garlic, chilli, or other seasonings for extra flavour.
- Boiling: Add tiger prawns to a large pan of boiling salted water and cook for 2–3 minutes until pink and cooked through, then drain and finish with lemon or your favourite dip.
- Baking: Preheat the oven to 200 °C. Arrange prawns on a baking tray, drizzle with olive oil, garlic, and herbs, and bake for 10–12 minutes until cooked through and slightly crisp.
Serving Suggestions
- Toss cooked Madagascan tiger prawns through pasta with garlic, cherry tomatoes, and a splash of white wine for a simple seafood pasta.
- Add grilled prawns to a fresh salad with mixed leaves, avocado, and citrus dressing.
